Black rice is popular throughout China and Korea, it is highly glutenous – which refers to its stickiness rather than it containing gluten. When cooked it is more purple than black. It has a more nutty flavour than most rice varieties. Suitable for porridge, desserts, breads, and Chinese black rice cake.
