Pearl Couscous

Also known as Maftoul, Ptitim and Palestinian couscous, this product is from Lebanon.

This is a prominent ingredient in Middle Eastern or Mediterranean cooking. Pearl couscous is like normal Moroccan couscous but it’s big! Incidentally (or not) the grains are pearl sized. Pearl couscous is suitable for a myriad of dishes. It can be served with curry, or used in salad, or in place of rice. Once cooked it is slightly chewy.

For 1 cup of Pearl couscous, use 1.5 cups of water or broth.

Cook by bringing to the boil then turning off heat. Pearl couscous can also be rinsed, and then steamed until ready.

Drizzle some olive oil through once cooked, to help keep grains separate.
